  3. reduce heat to low, and simmer for 5-10 minutes

What type of Milk to use in Turmeric Chai?

In India, whole milk is typically used in Masala Chai. You can substitute almond, oat or lighter milk with great results.

If you like a rich Chai, use a ratio of half water and half milk.  If you like a thinner Chai, increase the ratio of water to milk. Simmering for longer also makes a stronger cup of tea.
